Sea Bass Fish Burrito

RECIPE PREPARATION    
 
  • 8 La Banderita - Carb Counter tortillas
  • 4 - 6 ounce Sea Bass fillets
  • 1/4 cup vegetable oil
  • 2 medium carrots, cut into thin strips
  • 1 teaspoon ground cumin Salt and pepper
  • 3 tablespoons honey
  • 2 tablespoons hot pepper
  • sauce Juice of 2 limes plus 2 teaspoons grated peel
  • 1/2 head red cabbage, shredded
  • 2 medium Haas avocados, chopped into cubes
  • 2 tomatoes, chopped into cubes
  • 1/3 cup finely chopped cilantro
  • 1 cup light sour cream
 

Step # 1 - Preparing Fish Fillets

Let's start

- In a large bowl, combine 2 tablespoons of oil with honey, hot sauce and lime juice; season with salt and pepper.

- Add the carrots, cabbage, avocado, tomato and cilantro; toss to make a slaw. Preheat a grill pan to medium. Coat the fish with the remaining oil and lime peel.

- Cover and grill the fish, turning once, about 8 minutes.

Step # 2 - Making Burrito

- Warm tortillas and divide fish into eight servings and place on tortillas.

- Garnish with slaw mixture. Serve with sour cream and extra slaw on the side.
