- 1 package Ole Flour tortilla
- ½ cup Ole melting shredded cheese
- ½ pound of pork sirloin
- ½ cup pineapple juice
- 4 dried guajillo chiles
- 3 serrano Chiles
- 6 Garlic cloves
- Pinch of cumin
- Pinch of oregano
- ¼ cup vinegar
- ½ pound of green tomato
- Tanned purple onion
- ½ cup chopped cilantro
- 1/2 cup cilantro
- Salt to taste
Step 1: Preparation green sauce
In a pot add tomato, serrano peppers, garlic, cilantro, chicken broth. Cover and simmer until it is soft.
Blend ingredients with a pinch of salt.
Pour into a bowl, add chopped cilantro and chopped onion. Stir well.
Step 2. Sauce Marinate the pork loin
In a pan add dried chilies, garlic, cumin, oregano, pineapple juice, vinegar and water. Boil until smooth pour into a blender and mix well.
Empty the sauce into a bowl, put pork loins into the sauce, add salt to taste. Place on the grill and roast. Remove from grill and cut into strips.
Step 4. make Quesadilla
Put Ole grated cheese on Ole fajita flour tortilla ,. On top place the loin cut. Cover with another tortilla , place in a pan and brown until cheese melts. Split into four pieces and serve the quesadilla on a plate. Add green salsa, red onion and fresh avocado tanned in long slices.
