Tortilla Omelette

RECIPE PREPARATION    
 
  • 2 Corn Tortillas "La Banderita"
  • 1 Tablespoon OLE Cotija Cheese
  •  Chopped cilantro
  • 1/2  onion
  • 1/4 Cup refried black beans
  • 2 Eggs
  • 2 Tomatoes
  • 1/2 Jalapeno pepper
  • 2 Lemons
  • Cooking Oil
  • Salt to taste
 

Step # 1 - Chop Vegetables

Let's start

- Chop onion, 2 tomatoes, cilantro and a half jalapeno pepper.

Step # 2 - Prepare Mexican Salsa

- In a bowl add half cup of chopped tomato, 2 tablespoons chopped onion,chopped jalapeno pepper,cilantro,salt to taste,add lemon juice and mix.

Step # 3 Make Tortilla Omelette

- In a bowl add 2 eggs, salt to taste and beat.
Cut 2 tortillas "La Banderita" into squares.In a hot pan add 1/4 cup of chopped onion and cook until golden brown.

- Add the tortillas in squares, add the eggs and cook.

Step # 4 Serve Omelette

- In a plate add the tortilla omelette, serve with the 1/4 cup of refried black beans and the mexican salsa. Sprinkle a tablespoon of  queso cotija over the beans.
