Mexican Stuffed Poblano Peppers

Time: 30 min. Difficulty: Moderate Servers: 2    
  • 4 Slices Fresco Crumbling Cheese - OLE
  • 2 Poblano chili
  • 1/2 Onion
  • 2 Tomatoes
  • 2 Garlic cloves
  • 1/4 Cuo tomato pure
  • 1 Cup refried beans
  • Handful of cilantro
  • Cooking oil
  • Salt to taste

Step # 1 - Prepare salsa

Let's start

- Cut 1/2 onion and 2 tomatoes.                                                     In a hot pan add cooking oil, chopped onion, 2 cloves of garlic, add the tomatoes and cook ultil golden brown.

- Put them in a blender, bring the liquid back to the pan and wait for it to boil.

- Add half cup of tomato pure, salt to taste and a handful of cilantro, boil for 5 min. to release the flavor of the cilantro.

Step # 2 - Prepare Peppers

- Put poblano peppers directly on the fire until the skin is golden brown. once that they are ready and crispy, put them inside the plastic back, leave the inside the plastic bag for about 10 min. then take the ppepers out of the bag and remove the skin.                         With the knife cut the pepper and take out the seeds.


Step # 3 Make Stuffed Peppers

- Cut Queso Fresco Ole into slices, fill the poblano peppers with refried beans, add 2 slices of Queso Fresco Ole to each pepper, put the stuffed peppers in a dish and cover with the sauce and  chopped cilantro on top.
