Chicken and Beans Quesadillas

  • 4 Ole Xtreme Wellness- Whole Wheat Wraps
  • 2 chicken breasts, boneless/skinless
  • 1 cup Ole Quesadilla cheese, shredded
  • 1 tbsp. fajita seasoning
  • 1/4 cup olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, chopped
  • 1- 15-ounce can black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro

Step # 1 - Preparing Lettuce Wraps

Let's start

- Coat chicken with oil and fajita seasoning. Cover and chill 30 minutes.

Cook chicken in a large nonstick skillet over medium-high heat, stirring constantly until done. Remove from skillet, and keep warm. Coat skillet with oil and add onion, garlic and jalapeño. Sauté until tender.

Stir in black beans and cilantro and cook until thoroughly heated.

Heat tortillas in an ungreased skillet, layering with chicken, beans and cheese. Top with another tortilla. Heat on low, turning once until cheese is completely melted.
