Chicken Caprese Wrap

2 pounds chicken breast

¼ teaspoon salt

¼ teaspoon pepper

2 cups quartered and seeded tomato medley (grape tomatoes)

1 cup torn baby spinach, fresh

Balsamic vinaigrette to taste

½ cup torn basil, fresh

Olé Quesadilla Cheese, shredded

6 (8-inch) Olé Xtreme Wellness Tomato Basil Tortillas, warmed according to directions


1. Season chicken with salt and pepper and grill or pan-fry until thoroughly cooked. Allow chicken to rest for at least 10 minutes before cutting into strips.

2. Place tortillas flat on serving dish. Layer remaining ingredients on one side of wrap and roll up. Repeat with remaining wraps. Cut in half when ready to serve.
