Mini Blueberry Breakfast Quesadilla

Ingredients

4-6 (8-inch) La Banderita Flour Tortillas

1½ cups oaxaca cheese, chopped

1½ cups blueberries, fresh

3 tablespoons powdered sugar

Fresh mint leaves for garnish

Directions

1. In a medium frying pan on low to medium heat, lay tortilla flat, sprinkle evenly with cheese, and add blueberries.

2. Fold tortilla in half and heat both sides for 2 minutes or until cheese is melted. Keep warm until serving.

3. Plate and sprinkle with powdered sugar and garnish with mint. Serve immediately.
