Perfect Fold Breakfast Quesadilla

Ingredients

  • 2 La Banderita Carb Counter Soft Taco tortillas
  • 2 tablespoons salsa
  • 2 eggs, scrambled.
  • 3 strips of bacon, crumbled.
  • 1 cup of shredded Ole Queso Quesadilla
  • 1 teaspoon cooking oil

Directions

  1. Cut the tortilla halfway through on one side.
  2. Add your fillings to each quadrant of the circle. Make sure salsa is in the first quarter to fold over, and cheese is in the final quadrant- so that it seals the quesadilla.
  3. Starting from one of your cut corners, fold each corner in so each filling has its own little pocket.
  4. Add oil to a medium skillet and heat to medium. Add folded tortilla and heat for about 3 minutes, until lightly toasted and golden brown.  Flip over and cook on other side for 2-3 minutes.
  5. Remove from skillet and cut it in half for serving. Serve with additional salsa or drizzled with crema – as desired.

Note that this method works for any kind of quesadilla.  Just make sure you use an ingredient that sticks to the tortilla in the first quadrant, and finish with cheese in the fourth quadrant.
